Blueberry Salmon Salad

Blueberry Salmon Salad Recipe by Mad WellnessThis is my go to meal for everything. It’s the: I have no idea what I want to eat, but I know I need to in the next 10 minutes or else sh*t is going to get interesting meal. I even eat this for breakfast before teaching spin! If someone had told me before I got down with Paleo that I would be eating salmon, in the AM, before a workout out – let’s be honest, I would have awkwardly stared at them till they went away with all their crazy.

Canned salmon really has become one of my favorite go-to protein sources, which is curious because I’m not a huge fish person – and canned fish kind of freaks me out. I did buy sardines once. Ok, fine, I bought them because I was dating this cute crossfitter for a hot second who was super hardcore. Soooo, I felt like if I ate sardines, I too would be hardcore and would instantaneously be able to do a muscle-up. Boy’s gone. Sardines are still here. I’m determined to get that freaking muscle-up though. Then I really would be hardcore.

I’m not going to lie, but this recipe is a little bit of a kitchen sink approach. Sometimes I put in all cherries, sometimes I add nuts – it’s a feel it out kind of experience. Let me know after all my experimenting if I’ve somehow missed a clutch ingredient.

Ingredients:

1 can of salmon (wild salmon has a great omega 3 to omega 6 ratio btws)
½ cup blueberries
¼ avocado
¼ cup unsweetened coconut flakes (the BIG kind, not the shavings - they're less fun)
2 Tbs golden raisins (love these little gems – I’m weirdly picky about my raisins and these rock)
2 Tbs dried cherries
dash o'salt, pepper, and onion powder
hefty drizzle: olive oil and balsamic vinegar

What to Do:

Not much to this one. Put everything in a bowl - mix -  chow.
